Pancakes

You would never guess these are healthy when you eat them. My husband even eats these and he will not eat ANYTHING healthy!

Healthy and YUMMY pancakes!

1 & 1/2 cups oatmeal
1 & 1/2 cups whole wheat flour
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 & 1/2 c. buttermilk
1 c. milk
1/4 c. veg oil
1 egg
1/3 c. sugar
3 Tbsp chopped pecans or walnuts (optional)

1. Grind the oats in a blender or food processor until fine. In a large bowl, combine ground oats, whole wheat flour, baking soda, baking powder and salt.

2. In another bowl, combine buttermilk, milk, oil, egg and sugar with an electric mixer until smooth. Mix wet ingredients into dry with a few swift strokes. Stir in nuts, if desired (although I don't know any guy who would actually do that!!!

3. Lightly oil a skillet or griddle, and preheat it to medium heat. Ladle 1/3 c. of the batter onto the hot skillet; cook the pancakes for 2-4 minutes per side, or until brown.

One bowl chocolate cake

2 cups white sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

preheat oven to 350 degrees. Grease ans flour two nine inch round pans
In a large bowl, stir together the sugar, flour, cocoa,baking powder,baking soda, ans salt. Add eggs, milk oil and vanilla, mix for 2 minutes on medium speed mixer. Stir in the boiling water last. (batter will be thin) pour into pans
Bake 30 to 35 minutes. Cool in pans for 10 minutes then remove to a wire racks to cool completely.

Pumpkin Whoopie pies

This one feeds an army so only make it when there is a lot of people going to eat it but it tastes really good!

3 cups pumpkin
3 cups sugar
1 1/2 cups shortening
3 eggs
5 1/2 cups flour
3 tsp baking powder
3 tsp cinnamon
3 tsp vanilla
3 tsp baking soda
1 tsp salt

Cream pumpkin, sugar, shortening and eggs together in a large bowl. Gradually add dry ingredients. Drop them from a tablespoon onto a greased cookie sheet. Bake at 350 degrees for 12-15 minutes.

filling
2 egg whites, beaten
1 tsp vanilla
2 cups confectioners sugar
1 1/2 cups shortening

In a medium sized bowl beat egg whites, vanilla,confectioners sugar well. Then add in the shortening and beat again until smooth. Spread filling between 2 pumpkin cookie halves.

Chicken pot pie

This one is pretty easy and tastes good. It maked enough for about 3 pies

2 cups chicken, cubed
pastry for 9 inch pie crust
1/2 c non dairy creamer
2 Tbsp flour
10 oz frozen peas and carrots
1 tsp salt
1 onion, chopped
pepper
Thyme (not sure how much the recipe does not say maybe 1/4 tsp)
2 1/2 cups broth (this one is a guess from other recipes I have found)

Preheat oven to 425
Line pan with pastry and refrigerate until ready
Melt butter ans saute onions until golden brown
Blend flour ,salt, pepper and thyme, cook over low heat for one minute. Remove from heat
Stir in chicken broth and non dairy creamer. Heat to boiling and boil for 1 minute stiring constantly. Stir in chicken and vegetables.
Allow to cool 10 minites.
Pour in pastry lined pan. Cover with pastry top and seal edges.
Bake 35-45 minutes or until golden brown.

Tortilla Shells

These taste much better than store bought ones! Thank you to Tricia for the recipe!

5 cups of flour
1/2 cup cup shortening
2 tsp salt
1 1/2 cups boiling water

Stir flour and salt together, then cut in the shortening
Make well pour in water kneed until smooth and not sticky (I waited for the water to cool a little so that I would not burn my hands)
roll in to 10 to 12 balls, cover in saran wrap let them sit from 1-8 hours
put cooking spray or butter in pan.
put in first tortilla for 20 to 30 seconds then on second side about 10 seconds
for the rest put on each side about 10 seconds a side)

Crock pot pizza

I am not a big crock pot fan but this one is good and extreemly easy!

1 1/2 lb ground beef (browned and drained)
2/3 of 16 oz box of spiral noodles (cooked and drained)
2 (12oz)pkg shredded mozzarella cheese
1 sm can mushrooms (I did not used mushrooms I used what I like on a pizza)
1 cup chopped onion
2 (16oz) cans pizza sauce
1 (3oz) pkg pepperoni

Combine in a big pot everything but cheese and pepperoni. Layer this and cheese and pepperoni in a crock pot. Finish with cheese and pepperoni on top. Cook on low tempeature for 5 hours. (serves 8)

Easy Lasagna

Mix together
1 1/2 Ground beef
1 jar Spaghetti sauce
brown meat and mix together

1 small box lasagna noodles, uncooked

Mix together:
12 oz cottage cheese
12 oz siur cream (personally I use rocatta cheese instead)
2 cups shredded mozzarella cheese
2 cups sherdded cheddar cheese
Spread a tiny bit of meat mixture om the bottom of a 9x13" pan, then layer
noodles
meat
cheese
noodles
meat
cheese
Bake for 45 minutes at 350 degrees, uncovered, then 45 minutes uncovered

Sloppy Joes *

This is my favorite sloppy joes recipe! It is easy and really good!

1 lb ground beef, browned
1 large onion, chopped
Salt and pepper to taste
1 cup Ketchup
1 Tbsp Vinegar
3 Tbsp Brown Sugar
1 Tsp mustard
1/2 cup water
1/4 tsp paprika
Salt and pepper to taste
Simmer 20 minutes

Brown the meat first
 Simmer for 20 minutes

Depending on how much water you put in it can be thicker or thinner

Sweet and Sour meatballs

Sweet and Sour Meatballs

I love this recipe I cannot eat onions and I do not like green peppers so I keep that out.

1 lb ground beef
1/2 cup dry bread crumbs
1/4 cup milk
2 Tbsp Finely chopped Onion
1 Tsp salt
1/2 Tsp Worcestershire
1 egg
Mix ingredients. Shape into meatballs(about 1 1/2 inch balls.
Cook in ungreased pan (approx 13x9x2") in a 400 degree oven until light brown, 20 to 25 Minutes

While that is cooking make the sauce:

Sauce:
1/2 cup packed brown sugar
1 Tbsp cornstarch
1 can (13 1/4 oz) pineapple chunks
1/2 cup vinegar
1 Tbsp soy sauce
1 small green pepper coursely chopped

Mix brown sugar and cornstarch in skillet.
Stir in pineapple (with syrup),vinegar and soy sauce.
Heat to boiling stirring constantly.
reduce heat.
Add meatballs.
Cover; simmer, stirring occationally, 10 min.
Stir in green peppers. Cover simmer until crisp and tender (5 minutes)
Serve over rice
